Bubba boy turns 2

Well as they say – how time flies.  Bubba boy just turned two!  As we just got back from Thailand (yes in the middle of the state of emergency) yesterday and his birthday was today we didn’t really have anything planned.  So this afternoon during his nap we looked online to find a cake for him.

While I was searching for a cake recipe I found this website.  Which gave me the idea of making bubba boy a garbage truck cake.  It was a bit of a toss up between plane, bus, train, and garbage truck but he really does love his ‘gomi shuu shuu shya’.  And that’s a damn big word for such a little fella to say.  It’s by far the biggest word he can say – so we figure he must really love them.

So then all I needed was a recipe.  And for that I found this web-page.  Although they are a little more ‘sugar friendly’ than I am, the banana cake recipe at the bottom of the list was just what I was looking for. However some of the commenters mentioned that it was very bland.  And also if your not as much of ‘sugar nazi’ as I am, there were quite a few comments praising the first Pumpkin Apple Harvest Cake.  We thought about not worrying about the sugar for today and making this one as the comments were really encouraging – but we cant get pumpkin puree here (yes I am serious).

Below is the banana cake recipe – I adjusted it a little to try to combat the blandness.  Which worked – the cake was not bland.  It was great for bubba boy he loved it.  The adults were not so enamored with it, it wasn’t bad at all – but death by chocolate cake it was not.

BANANA CAKE

2/3 c. banana, mashed
1/2 c. butter, softened
3 lg. eggs
3/4 c. water
2 c. unbleached flour
2 tsp. baking powder
1 tsp. baking soda
1 tsp. cinnamon
Optional: 1 c. chopped walnuts OR 1/2 c. chopped walnuts & 1/2 c. raisins (I used 140grams of dried fruit mix and 1 tsp of caramel essence)
My icing:
1 250g pack of cream cheese
50mls (approx) of Apple Juice – I just poured it in bit by bit as I beat the Cream cheese until it was a smooth consistency
1 tsp of caramel essence (optional – as I couldn’t taste it in there so either you need to add more to taste or skip it.)
Grease and flour a 9 x 13 inch pan. Beat together mashed banana and soft butter until creamy. Beat in water. In a separate bowl, beat eggs until very foamy. Beat into mixture. Blend in flour, baking powder, baking soda and cinnamon. Beat until smooth. Stir in walnuts or walnuts and raisins, if desired. Spread batter evenly in pan. Bake at 350 degrees for 20 minutes or until a knife inserted comes out clean. Cool. Serves 8-10.
